This French Onion Chicken Casserole is a comforting and savory dish combining sweet caramelized onions, tender chicken, crusty toasted baguette slices, and melted Gruyere cheese, baked to golden perfection. Inspired by classic French onion soup flavors, this casserole makes for an easy yet elegant meal perfect for weeknight dinners or casual gatherings.

  • Total Time: 40 minutes
  • Yield: 4 to 6 servings

Ingredients

Casserole Base

  • 2 tablespoons salted butter
  • 1 lb. Vidalia onions or other sweet onions, thinly sliced (about 2 medium onions)
  • Kosher salt and ground black pepper, to taste
  • 1 teaspoon minced fresh thyme leaves (or about ¼ teaspoon dried thyme)
  • 1 clove garlic, peeled and minced or pressed
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Worcestershire sauce
  • 3 cups cooked, diced or shredded chicken (such as the meat from a rotisserie chicken)
  • 1 cup chicken stock or beef broth

Toppings

  • 9 to 10 slices crusty French baguette (or other similar bread), sliced about ½-inch thick
  • 1 cup grated Gruyere cheese (or substitute with grated Swiss cheese)
  • Optional, for serving: chopped fresh thyme or parsley for garnish

Instructions

  1. Toast the bread: Preheat your oven to 475°F. Arrange the baguette slices on a baking sheet and toast for about 4 to 5 minutes until lightly crisp. Remove and set aside.
  2. Soften the onions: In a medium ovenproof skillet, melt the butter over medium-high heat. Add the thinly sliced onions and season with salt and pepper. Cover with a lid and cook, stirring occasionally, until the onions are softened, approximately 3 to 5 minutes.
  3. Caramelize the onions: Remove the lid and stir in the fresh thyme and minced garlic. Continue cooking uncovered, stirring frequently, until the onions turn a deep golden brown, about 15 minutes. To prevent burning and speed caramelization, add a tablespoon of water as needed, stirring until evaporated before adding more.
  4. Add vinegar and Worcestershire sauce: Stir in balsamic vinegar and Worcestershire sauce, cooking for an additional minute to meld flavors.
  5. Add chicken and broth: Incorporate the cooked chicken and chicken stock (or beef broth), scraping up any browned bits from the bottom of the skillet. Season with salt and pepper to taste. Bring to a boil briefly, then remove from heat.
  6. Top with bread and cheese: Arrange the toasted baguette slices evenly over the chicken and onion mixture in the skillet. Sprinkle the grated Gruyere cheese evenly on top.
  7. Bake the casserole: Place the skillet in the preheated 475°F oven and bake for 5 to 10 minutes, until the cheese is melted and begins to turn golden brown.
  8. Serve: Remove from oven and garnish with chopped fresh parsley or thyme if desired. Serve immediately for best flavor and texture.

Notes

  • If you do not have Gruyere cheese, Swiss cheese is a great substitute offering similar meltability and flavor.
  • Using an ovenproof skillet allows you to both sauté and bake in the same dish, simplifying cleanup.
  • You can use leftover cooked chicken or rotisserie chicken to speed up preparation.
  • Be patient with caramelizing onions to develop deep, sweet flavor without burning.
  • If you want a richer dish, feel free to add a splash of heavy cream before baking.
  • For a gluten-free option, use gluten-free bread instead of baguette.
