Ingredients
Chicken and Marinade
- 2 pounds chicken drumsticks
- 1 cup soy sauce
- 1 cup cane vinegar
- 6 cloves garlic, minced

Instructions
- Marinate the Chicken: Combine the chicken drumsticks, soy sauce, cane vinegar, minced garlic, thinly sliced yellow onion, brown sugar, bay leaves, and black peppercorns in a resealable bag. Seal the bag and marinate for 1 to 3 hours in the refrigerator to allow the flavors to penetrate the chicken.
- Heat the Pot: Place a medium to large pot with a lid on the stovetop over medium-high heat. Add 1 tablespoon of avocado oil (or any neutral oil) to the pot to prepare for browning the chicken.
- Brown the Chicken: Remove the chicken drumsticks from the marinade, reserving the marinade for later. Add the chicken pieces to the hot pot and brown for about 2 minutes on each side until they develop a golden crust. This step locks in flavor and texture.
- Simmer the Chicken: Pour the reserved marinade into the pot with the browned chicken. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer gently for 30 minutes, allowing the chicken to cook through and the flavors to meld beautifully.
