  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

For the Fajita Gnocchi Skillet

  • 1 large package gnocchi, gluten free if needed (use two boxes if gluten free for quantity)
  • 1 large red pepper, thinly sliced and then cut in half
  • 1 large green pepper, thinly sliced and then cut in half
  • 1 yellow onion, thinly sliced
  • 1 (15 ounce) can black beans, drained and rinsed
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 1/2 teaspoons granulated garlic
  • 1/4 teaspoon ground oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Olive oil, for cooking

For the Avocado Salsa

  • 2 large avocados
  • 1 medium tomato, diced
  • 2 tablespoons chopped onion
  • 2 tablespoons chopped cilantro
  • 1-2 tablespoons chopped jalapeno
  • 1 clove garlic, minced
  • Juice of 1 lime
  • Salt, to taste

Instructions

  1. Cook the gnocchi: Heat a large skillet over medium heat and add olive oil. Once hot, add the gnocchi and cook until softened and golden brown, about 5 minutes, stirring occasionally to ensure even browning.
  2. Sauté the vegetables: Remove the gnocchi from the skillet. Add about 2 teaspoons olive oil, then add the thinly sliced red and green peppers and onions with a pinch of salt. Cook this fajita mixture until the peppers are tender, about 5-7 minutes, stirring occasionally.
  3. Combine gnocchi and spices: Return the golden gnocchi to the skillet along with drained black beans. Add salt, black pepper, ground cumin, paprika, granulated garlic, and ground oregano. Stir well to combine all ingredients and cook for a few more minutes until everything is heated through and the flavors meld.
  4. Prepare the avocado salsa: While the gnocchi cooks, dice the avocados and place them in a large bowl. Add the diced tomato, chopped onion, cilantro, jalapeno, minced garlic, and lime juice. Mix gently until combined, then refrigerate until ready to serve to keep fresh.
  5. Serve: Immediately plate the fajita gnocchi skillet and top each serving with a generous spoonful of the fresh avocado salsa for a creamy, zesty finish.

Notes

  • If using gluten-free gnocchi, consider doubling the amount as those packages may contain fewer gnocchi pieces than regular.
  • Adjust jalapeno quantity in the avocado salsa based on your spice preference.
  • Leftover avocado salsa is best consumed within 1 day to maintain freshness and prevent browning.
  • For extra protein, try adding cooked chicken or tofu to the skillet.
  • Use a non-stick skillet for easier gnocchi browning and cleanup.
