Ingredients

Eggs and Cheese

  • 4 eggs
  • 2-4 tablespoons finely grated parmesan cheese

Tomato Sauce

  • 14oz / 400g can peeled tomatoes
  • ¼ small onion, finely diced
  • 1 small garlic clove, diced
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon extra virgin olive oil
  • Handful fresh basil leaves
  • Salt and black pepper to taste
  • ½ cup water (to rinse the tomato can)

Instructions

  1. Heat and sauté aromatics: In a medium skillet, heat the olive oil over low-medium heat. Add the finely diced onion and red pepper flakes and sauté for a few minutes until the onion softens. Then add the diced garlic and cook briefly until fragrant.
  2. Add tomatoes and break up: Pour in the canned peeled tomatoes and using a wooden spoon, break the tomatoes into smaller pieces to create a chunky sauce base.
  3. Simmer sauce: Add ½ cup of water collected from rinsing the tomato can to capture all the juice. Season the sauce with salt and pepper, tear in a few basil leaves, stir well, then cover and simmer on low heat for about 20 minutes until the sauce reduces and flavors meld.
  4. Create wells for eggs: Once the sauce has thickened nicely, use the back of a spoon to create 4 wells in the sauce. Carefully crack an egg into each well, keeping the yolks intact; alternatively, crack eggs into a small bowl first and gently pour into the wells.
  5. Cook eggs in sauce: Season the eggs with salt and pepper. Cover the skillet and simmer gently for 3-5 minutes or until the eggs are cooked to your liking (cook longer if you prefer less runny yolks).
  6. Finish and garnish: Once eggs are set, sprinkle the grated parmesan cheese over the top and garnish with the remaining fresh basil leaves. Serve immediately, ideally with crusty bread for dipping and enjoying all the sauce.
