Ingredients

Eggs and Oil

Instructions

  1. Cook the Eggs: Heat a wok or large, deep skillet over medium-high heat and add 1 tablespoon olive oil. Whisk the eggs lightly and pour them into the pan, cooking while stirring often until the eggs are completely set. Transfer the cooked eggs to a plate for later use.
  2. Sauté Onion: Add another tablespoon of olive oil and 1 tablespoon of butter to the pan. Add the diced onion and cook until translucent, about 2 minutes, stirring frequently to avoid burning and ensure even cooking.
  3. Add Garlic and Vegetables: Stir in the minced garlic and cook for 30 seconds until fragrant. Add 1 tablespoon butter and the thawed peas, carrots, and corn. Cook until the vegetables are heated through.
  4. Incorporate Rice: Add the remaining 3 tablespoons of butter to the center of the pan. Add the chilled day-old rice and toss it thoroughly with the vegetables, breaking up any clumps to ensure even cooking.
  5. Create Crispy Bits: Press the rice down into the pan and let it sit undisturbed for 1 to 2 minutes until you hear popping sounds. Stir the rice and repeat this pressing and letting sit process a few times to create crispy, flavorful bits throughout the dish.
