These Easy Sweet Potato Pie Bars combine a buttery almond flour crust with a spiced, creamy sweet potato filling for a delightful dessert. Perfectly baked and chilled to set, these bars offer the classic flavors of sweet potato pie in a convenient portable form, sweetened naturally with maple syrup and enriched with warming spices.

  • Total Time: 7 hours 25 minutes
  • Yield: 12 bars

Ingredients

For the Crust:

  • 2 cups almond flour
  • 1 tablespoon tapioca starch
  • 1/4 cup maple syrup
  • 4 tablespoons butter, diced
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt

For the Filling:

  • 15 oz canned sweet potato puree
  • 2/3 cup maple syrup
  • 1 tablespoon vanilla extract
  • 2 eggs + 1 egg yolk, whisked
  • 1/2 cup plain almond milk
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cardamom
  • small pinch of cloves

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350 degrees Fahrenheit and line an 8×8 inch baking pan with parchment paper to prevent sticking and make removal easier.
  2. Make the crust dough: Add almond flour, tapioca starch, maple syrup, cold diced butter, vanilla extract, ground cinnamon, and sea salt to a food processor. Pulse for about 30 seconds until the mixture forms a sticky dough ball, scraping down the sides once to ensure even mixing.
  3. Form and pre-bake crust: Remove the dough from the processor and press it evenly into the prepared pan. Bake at 350°F for 15-18 minutes until the crust turns lightly golden. Remove and set aside.
  4. Prepare the filling: In a mixing bowl, whisk together sweet potato puree, maple syrup, vanilla extract, eggs plus egg yolk, almond milk, and all the spices (cinnamon, ginger, nutmeg, cardamom, cloves) until the mixture is smooth and thoroughly combined.
  5. Assemble and bake: Pour the sweet potato filling evenly over the pre-baked crust. Gently tap the pan on the counter to release air bubbles and level the filling. Bake at 350°F for 50-60 minutes until the filling is set but still slightly jiggly in the center.
  6. Chill before serving: Allow the baked bars to cool, then refrigerate for 6-8 hours or overnight to fully set and develop flavor.
  7. Slice and garnish: Once chilled, cut the bars into 12 equal pieces. Optionally, serve each bar with a small dollop of whipped cream and a sprinkle of cinnamon for extra indulgence.

Notes

  • Use canned sweet potato puree for convenience and consistent texture, or roast and mash your own sweet potatoes if preferred.
  • Make sure butter is cold when adding to the food processor to help create a tender crust.
  • Chilling the bars overnight is critical for the filling to set properly for clean slicing.
  • For a nut-free crust, substitute almond flour with oat flour but expect a different texture.
  • Maple syrup provides natural sweetness; adjust to taste if you prefer a sweeter or less sweet dessert.
  • Store leftover bars refrigerated in an airtight container for up to 4 days.
  • Enjoy these bars chilled or at room temperature depending on your preference.
