These Easy S’mores Cookie Bars combine classic s’mores flavors in a convenient, oven-baked treat. Layers of chocolate chip cookie dough, melted chocolate chips, graham cracker crumbs, and marshmallow fluff create a gooey, sweet dessert that mimics the nostalgic campfire favorite. Ingredients

Cookie Dough

  • 2-3 packages pre-made chocolate chip cookie dough (about 2 packs Sweet Loren’s or 1 pack traditional Toll House)

Chocolate Layer

  • 2 cups milk chocolate chips or dark chocolate chips (or 3 Hershey’s chocolate bars)

Graham Cracker Layer

  • 1 cup graham cracker crumbs

Marshmallow Layer

  • 2 cups marshmallow fluff/creme

Instructions

  1. Prep: Remove the chocolate chip cookie dough packages from the fridge and allow them to sit out for 10-15 minutes until at room temperature for easier handling. If frozen, thaw fully. Line a 9×9 inch square baking pan with parchment paper and preheat the oven to 350°F (175°C).
  2. Form Bottom Dough Layer: Press half of the cookie dough into the bottom of the prepared pan, forming an even layer without holes. Use approximately 2 packs of Sweet Loren’s or 1 pack of traditional dough.
  3. Add Chocolate Layer: Sprinkle the chocolate chips evenly over the cookie dough layer, distributing them to almost cover the dough.
  4. Add Graham Cracker Crumbs: Evenly crumble and sprinkle 1 cup of graham cracker crumbs on top of the chocolate chips layer.
  5. Spread Marshmallow Layer: Dollop the marshmallow fluff over the graham crackers and spread it out evenly with a spatula. Spray the spatula with nonstick spray if needed to prevent sticking.
  6. Top with Remaining Dough: Take the remaining cookie dough and press it flat between your fingers. Lay the flattened dough in rows atop the marshmallow layer. Some marshmallow showing through is ideal as it creates a gooey texture while baking.
  7. Bake: Bake the assembled bars for 25-30 minutes in the preheated oven. Watch closely during the last 10 minutes to avoid burning the edges or marshmallow. The bars are done when the cookie dough is set and golden brown.
  8. Cool and Serve: Let the s’mores bars cool completely for at least 2 hours, allowing the layers to set. Once cooled, use a sharp knife to cut into 16 squares and serve.

Notes

  • If using traditional cookie dough, 1 package is sufficient; Sweet Loren’s dough may require 2-3 packages.
  • Nonstick spray on the spatula helps when spreading sticky marshmallow fluff.
  • Allow bars to cool fully to prevent them from falling apart when cut.
