Ingredients
For the Steak and Marinade
- 1 pound flank steak, sliced into ½ inch strips
- 1 tablespoon lime juice
- ¼ cup olive oil, divided
- 3 tablespoons fajita seasoning, divided
For the Vegetables
- 1 yellow onion, sliced into ½ inch slices
- 1 red bell pepper, sliced into ½ inch slices
- 1 green bell pepper, sliced into ½ inch slices
- 1 yellow bell pepper, sliced into ½ inch slices
- Salt and pepper, to taste
For Serving
- Small flour or corn tortillas
- Limes, sliced
- Cilantro, chopped
- Avocado, optional
Instructions
- Preheat and Prepare Steak: Preheat your oven to 400°F (200°C) and line a baking sheet with foil. Slice the flank steak into ½ inch strips to ensure quick and even cooking.
- Make the Marinade: In a bowl, whisk together 2 tablespoons of olive oil, 1 ½ tablespoons of fajita seasoning, and lime juice. This marinade will infuse the steak with bright, zesty flavors.
- Marinate the Steak: Place the sliced steak into a resealable bag and pour the marinade over it. Toss to coat well, then set aside to rest and absorb flavors while you prepare the vegetables.
- Prep the Vegetables: Slice the yellow onion and all three bell peppers into ½ inch thick strips. In a large bowl, toss the vegetables with the remaining olive oil, fajita seasoning, and salt and pepper to taste, coating them evenly.
- Arrange on Sheet Pan: Spread the seasoned vegetables evenly on the foil-lined baking sheet, leaving space to add the marinated steak. Place the steak strips in a single layer next to the vegetables on the same pan.
- Bake the Fajitas: Place the sheet pan in the oven and bake for 12-15 minutes. About halfway through, toss and turn both the vegetables and steak to ensure even cooking and caramelization.
- Prepare Tortillas and Toppings: While the fajitas bake, toast your flour or corn tortillas on a skillet or griddle until warm and slightly charred. Slice limes and chop cilantro for fresh toppings.
- Serve: Once the steak is cooked through and veggies are tender, remove the sheet pan from the oven. Let the mixture cool for a few minutes before serving with toasted tortillas, lime wedges, chopped cilantro, and optional avocado slices for added creaminess.
Notes
- For a spicier version, add sliced jalapeños to the vegetable mix or increase fajita seasoning amount.
- Flank steak can be substituted with skirt steak or sirloin if preferred.
- Marinating the steak for at least 30 minutes to an hour will deepen flavor but can be prepared without marinating for a quicker option.
- Use corn tortillas to keep this dish gluten free.
- Serve with sour cream or cheese for richer toppings if desired.
