Ingredients
Chicken and Vegetables
- 2 tablespoons cooking oil (such as avocado oil or olive oil)
- 1 pound chicken tenders
- 1 ½ tablespoons fajita spice blend, divided (see notes for homemade fajita spice blend or use your favorite prepared blend)
- 1 bell pepper (red or green), sliced
- 1 yellow onion, sliced
- 4 cups fresh kale, chopped
- 15 oz canned black beans, drained and rinsed
Yogurt Sauce
- ¼ cup plain Greek yogurt
- 1 tablespoon lime juice
- Reserved 1 teaspoon fajita spice blend from above
Instructions
- Preheat and prepare sheet pan: Preheat your oven to 425℉ (220℃) and grease a 15×10-inch sheet pan with cooking oil or coat it with cooking spray to prevent sticking.
- Season chicken and vegetables: In a small bowl, combine 1 ½ tablespoons of fajita spice blend, reserving 1 teaspoon for later use. Place the chicken tenders, sliced bell peppers, and sliced onions on the prepared sheet pan. Drizzle 1 tablespoon of cooking oil over them and use tongs to toss until everything is evenly coated. Sprinkle the remaining seasoning over the chicken and vegetables and toss again to distribute the spice blend.
- Roast chicken and vegetables: Place the sheet pan in the oven and roast for 15 minutes until the chicken starts to cook through and vegetables begin to soften.
- Prepare kale and beans: While the chicken roasts, combine the chopped kale and drained black beans in a large bowl. Season with salt to taste and drizzle with the remaining 1 tablespoon of cooking oil. Toss well to coat.
- Add kale and beans, continue roasting: Remove the sheet pan from the oven, stir the chicken pieces to redistribute heat, then evenly spread the kale and black bean mixture over the top. Return the pan to the oven and roast for an additional 5 to 7 minutes until the chicken reaches an internal temperature of 165℉ (74℃) and the kale is tender.
- Make lime yogurt sauce and serve: While the fajitas finish roasting, whisk together the reserved 1 teaspoon of fajita spice blend, Greek yogurt, and lime juice in a small bowl. Serve dollops of this tangy sauce alongside the fajitas for added flavor.
Notes
- For homemade fajita spice blend, combine chili powder, paprika, cumin, garlic powder, onion powder, salt, and black pepper to taste.
- Use avocado oil or olive oil for healthy fats and a mild flavor.
- Internal chicken temperature must reach 165℉ (74℃) to ensure safe consumption.
- Optionally, serve with warm tortillas, avocado slices, or salsa to complete the fajita experience.
- To make this dish gluten free, verify the fajita spice blend and canned beans contain no gluten ingredients.
