Ingredients

  • 5 cups low-fat milk (divided)
  • ¼ cup sugar
  • 1 pinch saffron
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare Nuts and Dates: Soak pistachios in warm water for 10 minutes, then remove the skin and slice thinly. If using whole almonds, soak them in hot water for 10 minutes, remove the skins, and slice thinly. Slice cashews and dates into thin pieces as well.
  2. Roast Nuts and Dates: Heat ghee in an Instant Pot or medium pot on the stovetop. Add the almonds, pistachios, cashews, and dates, and roast them for 2 to 3 minutes until fragrant.
  3. Add Dry Ingredients: Mix in the raisins, roasted vermicelli, shredded coconut, and white poppy seeds with the nuts. Continue roasting for another 1 to 2 minutes until the coconut and poppy seeds turn light brown.
  4. Add Milk and Sweeteners: Pour in 3 cups of milk, add sugar and saffron, and stir quickly. For stovetop cooking, simmer on medium heat for 8 to 10 minutes until the vermicelli is soft and the mixture comes to a rolling boil. For Instant Pot, close the lid, set pressure valve to sealing, and cook on Manual (low) for 5 minutes. Let the pressure release naturally.
  5. Finish the Dish: Stir in vanilla extract. Add an additional 1 to 2 cups of milk to adjust the consistency to your liking. Remember that the sheer khurma will thicken as it cools, so additional milk can be added before serving if necessary.
  6. Final Boil and Serving: Bring the sheer khurma to a gentle boil once more, stirring frequently to prevent sticking. Serve hot or chilled, according to preference.
