Ingredients
Roasted Carrots
- 1 tablespoon olive oil
- 1 1/2 pounds carrots, peeled and cut into 1-inch chunks
- Kosher salt to taste (about 3/4 teaspoon)
- Freshly ground black pepper, to taste
Honey Butter Topping
- 2 tablespoons melted salted butter
- 1 tablespoon honey
- 1-2 teaspoons chopped fresh dill
- Flaky sea salt, for sprinkling
Instructions
- Preheat the oven: Set your oven to 425°F (220°C) to ensure it reaches the right temperature for roasting the carrots to a perfect caramelized finish.
- Prepare the carrots: Peel and cut the carrots into 1-inch chunks. Place them in a large bowl and toss with olive oil, kosher salt, and freshly ground black pepper to evenly coat them for roasting.
- Roast the carrots: Spread the carrots in a single layer on a baking sheet. Roast in the preheated oven for 15 to 25 minutes, or until they are fork-tender and lightly browned. The exact cooking time will depend on the size of your carrot pieces.
- Make the honey butter glaze: While carrots are roasting, whisk together the melted salted butter and honey in a small bowl until well combined for a sweet, rich glaze.
- Glaze and garnish: Once the carrots are done roasting, transfer them to a serving plate. Toss the warm carrots with the honey butter mixture to coat evenly. Sprinkle chopped fresh dill and flaky sea salt on top for a burst of flavor and texture. Serve immediately.
Notes
- Use carrots of uniform size for even roasting.
- Adjust roasting time based on how tender or caramelized you prefer your carrots.
- Fresh dill adds a bright, herby contrast; substitute with parsley or thyme if desired.
- Flaky sea salt enhances the texture and flavor; regular salt can be used but omit additional salt to avoid over-seasoning.
