- 150 g butternut squash, chopped into 2.5 cm cubes

Instructions
- Prepare the Ingredients: Gather and prepare all ingredients by chopping the onion, grating the ginger and garlic, rinsing the red lentils, and chopping the butternut squash into 2.5 cm cubes.
- Heat the Skillet: Place a skillet over medium heat and add the olive or vegetable oil to warm it up for sautéing.
- Sauté Aromatics: Add the chopped onion, grated garlic, and ginger to the skillet and cook until soft and fragrant, stirring occasionally to prevent sticking or burning.
- Add the Curry Paste: Stir in the Thai red curry paste thoroughly, mixing it with the aromatics and cooking it until heated through to release its flavors.
- Add Lentils and Squash: Incorporate the rinsed red lentils, chopped butternut squash, curry powder, turmeric, and cumin. Stir well to coat the lentils and squash evenly with the spices.
- Add Liquid and Simmer: Pour in the vegetable broth or water. Increase heat just enough to bring the mixture to a gentle simmer.
- Cook the Vegetables: Add the whole or halved cherry tomatoes and baby spinach. Cover the skillet, reduce the heat, and let the curry simmer gently for about 15 minutes until the lentils are tender, the tomatoes have burst, and the spinach is wilted.
- Finish and Serve: Remove from heat and serve the dhal hot alongside naan bread and rice for a complete meal.

- To make this dish vegan, ensure the naan bread served is vegan or substitute with rice alone.
- For added protein, consider topping the curry with a dollop of yogurt or coconut yogurt for a dairy-free option.

- If you prefer a thicker dhal, reduce the amount of broth or let it simmer uncovered for the last few minutes.
