- 6 Cumberland or Lincolnshire sausages
- 400 g tin butter beans (drained and rinsed)
- 300 g baby spinach (washed)
- 1 tablespoon olive oil
- 1 large onion (chopped)
- 2-4 cloves garlic (minced)
- 1 teaspoon thyme leaves (fresh or dried)
- 150 ml white wine (optional)
- 250 ml chicken stock (1 stock cube dissolved in boiling water)
- Zest of 1 lemon
Toppings and Creamy Mixture
- 25 g breadcrumbs made from stale bread or crackers (divided)
- 2 tablespoons crème fraîche or sour cream
- 20 g parmesan (grated)
Instructions
- Brown the Sausages: In a heavy saucepan or cast iron pot, heat the olive oil over medium heat. Once hot, add the sausages and cook until golden brown on all sides. Remove the sausages and set them aside.
- Sauté Aromatics: Add a little more olive oil to the same pan if needed. Add the chopped onion, minced garlic, and thyme leaves. Sauté for about 5 minutes, until the onions are soft and fragrant.
- Deglaze and Simmer: Pour in the white wine (if using), chicken stock, and add the drained butter beans. Stir to combine and bring the mixture to a gentle simmer to meld the flavors.
- Combine Ingredients: Add the baby spinach, crème fraîche or sour cream, lemon zest, most of the breadcrumbs (reserve 2 tablespoons for topping), and grated parmesan cheese. Stir the mixture gently until smooth and creamy.
- Finish Cooking: Return the browned sausages to the pot, nestling them into the casserole. Cover with a lid and cook for another 5 minutes over low to medium heat to heat the sausages through and allow the flavors to blend.
- Top and Serve: Remove the lid and sprinkle the remaining breadcrumbs and extra parmesan over the top. Drizzle with a little olive oil if desired. Serve hot, dividing the casserole between bowls or plates.
Notes
- For a vegetarian version, substitute sausages with plant-based alternatives and use vegetable stock.
- White wine is optional; if omitted, increase chicken stock slightly for more liquid.
- Breadcrumbs add texture; use gluten-free breadcrumbs if needed for gluten intolerance.
- Serve with crusty bread or a green salad for a complete meal.
- Leftovers can be refrigerated for up to 2 days and reheated gently on the stovetop.
