This Easy One Pot Pasta with Ground Beef and Broccoli is a hearty, delicious weeknight meal that combines tender pasta, savory ground beef, fresh broccoli, and cherry tomatoes all cooked together in one pot for minimal cleanup. Bursting with flavor from sautéed onions, mushrooms, garlic, and finished with Parmesan cheese and fresh parsley, this recipe is perfect for a quick and satisfying dinner.

  • Total Time: 30 minutes
  • Yield: 6 servings

Ingredients

Main Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 onion, chopped (about ½ cup)
  • 1 (8-oz) package mushrooms, sliced
  • 1 pound lean ground beef
  • 8 ounces short pasta (such as tube, macaroni, etc.)
  • 3 cups chicken broth (or vegetable or beef broth)
  • 1 teaspoon salt
  • 3 cups broccoli florets (about 1 large head)
  • 12 ounces cherry tomatoes, halved
  • 2 garlic cloves, grated, minced, or pressed
  • Pinch of red pepper flakes
  • ½ cup fresh parsley, finely chopped
  • ½ cup grated Parmesan cheese

Instructions

  1. Sauté Aromatics and Vegetables: Preheat a large Dutch oven or pasta pot over medium heat and add the olive oil. When the oil is hot, add the chopped onion and sliced mushrooms and sauté for 3 to 4 minutes until softened and fragrant.
  2. Cook Ground Beef: Add the lean ground beef to the pot and cook for about 5 minutes, stirring and breaking it up with a spatula until no longer pink.
  3. Add Pasta and Broth: Stir in the dry pasta, salt, and pepper. Pour in the chicken broth and bring the mixture to a boil. Use the spatula to press the pasta down so it is mostly submerged under the liquid.
  4. Simmer Pasta: Cover the pot and reduce the heat to low. Let it cook for 10 to 12 minutes until the pasta is al dente, stirring once or twice during cooking to prevent sticking.
  5. Add Vegetables and Steam: Remove the lid and stir in the broccoli florets, cherry tomatoes, garlic, and red pepper flakes. Cover again, turn off the heat, and let the pot sit for 5 minutes so the vegetables steam and become crisp-tender.
  6. Finish and Serve: Stir in the fresh parsley and grated Parmesan cheese if using. Serve the pasta warm for a comforting, flavorful meal.

Notes

  • Use chicken, vegetable, or beef broth depending on your preference and dietary needs.
  • For a vegetarian version, substitute the ground beef with plant-based meat alternatives.
  • Adjust red pepper flakes according to your spice tolerance.
  • Freshly grated Parmesan adds the best flavor, but pre-grated can be used for convenience.
  • Stir occasionally during pasta cooking to prevent it from sticking to the bottom.
