Wet Ingredients
- 2 medium bananas (the riper, the sweeter your pancakes will be)
- 3 large eggs
- 1 cup cottage cheese (whole milk or low-fat)
- 1 tablespoon avocado oil or melted butter
- 2 teaspoons vanilla extract
- 2 tablespoons maple syrup (plus extra for serving, if you want)

Instructions
- Prepare oat flour: Add the oats, baking powder, cinnamon, and salt to your blender. Blend until the mixture looks like fine flour, about 30 seconds. Pour the oat flour into a large bowl and set aside.
- Blend wet ingredients: In the now empty blender, add the bananas, eggs, cottage cheese, vanilla extract, oil, and maple syrup. Blend until smooth and creamy.
- Combine mixtures: Pour the wet cottage cheese mixture over the oat flour in the bowl. Stir gently until well incorporated into a pancake batter. If you have a high-speed blender, you can blend all ingredients together at once but be sure to scrape the sides to ensure everything is pureed evenly.
- Heat skillet: Preheat a large skillet over medium-low heat and lightly grease it with oil spray or butter to prevent sticking.
- Cook pancakes: Scoop scant ¼-cup portions of batter into the skillet to form pancakes. Cook until small bubbles form on the surface and the edges look dry, about 2-3 minutes. Flip carefully and cook the other side for another 1-2 minutes until golden brown and cooked through.
- Serve: Transfer cooked pancakes to a plate and continue cooking with the remaining batter. Serve warm with maple syrup if desired.
- Storage: Let pancakes cool completely before storing leftovers in an airtight container. Keep refrigerated for 4-5 days or freeze for up to one month.

- Use ripe bananas for the best natural sweetness.
- You can use either whole milk or low-fat cottage cheese depending on preference.
- If you don’t have oil spray, butter or any neutral oil works well to grease the skillet.
- High-speed blenders like Vitamix can blend all ingredients together without separating into wet and dry.
