Ingredients
Crust
- 300 grams Graham crackers or Digestive biscuits
- 150 grams unsalted butter (melted)
Strawberry Puree
- 450 grams fresh strawberries (frozen works too)
- 2 tablespoons granulated sugar
Cheesecake Filling
- 500 grams cream cheese (room temperature)
- 100 grams granulated sugar
- 1 teaspoon pure vanilla extract
- 240 ml heavy whipping cream
- Optional: 2 tablespoons gelatin powder (around 20 grams)
Instructions
- Prepare the Crust: Grind the biscuits into a fine powder using a food processor. Mix the crumbs with the melted butter until well combined, then press this mixture firmly into the bottom of a 9-inch springform pan. Chill the crust in the refrigerator to set while preparing the filling.
- Create the Strawberry Puree: Clean the strawberries, remove their stems, and puree them in a blender or food processor along with the sugar until smooth and well combined. Set aside.
- Prepare the Cheesecake Filling: In a large bowl, whip the room-temperature cream cheese using an electric whisk until light and fluffy. Gradually add the heavy whipping cream, sugar, and vanilla extract, continuing to mix until smooth. Gently fold in the strawberry puree with a spatula until the mixture is evenly combined.
- If Using Gelatin: Sprinkle the gelatin powder over 1/4 cup of cold water and let it bloom for a few minutes. Warm the gelatin gently until it liquefies (do not boil), then let it cool slightly before stirring it into the cheesecake filling to help it set better.
- Assemble and Chill the Cheesecake: Pour the prepared filling over the chilled crust in the springform pan. Smooth the surface with a spatula. Refrigerate for at least 4-6 hours to firm up; overnight chilling is recommended for best texture.
- Garnishing and Serving the Cheesecake: Once set, garnish the cheesecake with fresh strawberry slices or a strawberry sauce. Carefully unlock the springform pan and slice the cheesecake with a sharp knife. Serve chilled and enjoy!
