Ingredients
Crust
- 15 graham crackers (about 2 cups crumbs)
- 7 tablespoons butter, melted
- ⅛ teaspoon salt
Strawberry Puree
- 1 cup strawberries, cut
- 1 ½ teaspoons sugar
- 1 ½ teaspoons orange juice
Gelatin Mixture
- 1 tablespoon unflavored gelatin
- 2 tablespoons water
- 3 tablespoons orange juice
Cheesecake Filling
- 16 ounces cream cheese, room temperature
- 1 ¼ cups sugar
- 1 teaspoon vanilla extract
- ⅛ teaspoon salt
- 1 cup heavy cream, unbeaten
Instructions
- Prepare the Crust: Place graham crackers in a food processor or a resealable bag and crush into fine crumbs using a rolling pin. In a bowl, mix the crumbs with melted butter and salt until combined. Press the mixture evenly into a pie dish sprayed with cooking spray, using a flat surface like the bottom of a glass to compact it firmly. Refrigerate for at least 30 minutes to set.
- Make the Strawberry Puree: In a bowl, combine the cut strawberries with 1 ½ teaspoons of sugar and 1 ½ teaspoons of orange juice. Stir gently and let the mixture sit for 30 minutes to macerate. Then, blend the strawberries using a blender, food processor, or immersion blender until smooth.
- Mix the Cheesecake Base: In the bowl of a stand mixer, add the room-temperature cream cheese, 1 ¼ cups sugar, vanilla extract, and salt. Beat until the mixture is smooth and creamy. Add the pureed strawberries and continue beating until fully combined.
- Dissolve the Gelatin: In a small bowl, combine the unflavored gelatin with 2 tablespoons of water and 3 tablespoons of orange juice. Microwave for about 10 seconds until the gelatin dissolves into a liquid form. Allow it to cool slightly before adding to the strawberry mixture. Beat again to incorporate evenly.
- Whip the Cream: Switch to the whisk attachment on the stand mixer. Pour in the unbeaten heavy cream, starting to mix on low speed to incorporate, then increase to high speed and whip for 1-2 minutes until soft peaks form and the mixture is light and fluffy.
- Assemble and Chill: Pour the cheesecake filling into the prepared graham cracker crust. Smooth the surface with an offset spatula. Refrigerate for at least 4 hours to allow the cheesecake to set firmly.
Notes
- Use fresh or frozen strawberries depending on availability; thaw frozen berries before pureeing.
- For a citrus twist, you can substitute orange juice with lemon juice if preferred.
- Ensure the cream cheese is at room temperature for a smooth batter.
- Gelatin can be substituted with agar-agar for a vegetarian option, but adjustments may be needed.
- Serving chilled enhances the texture and flavor of the cheesecake.
