Ingredients
Cake Layer
- 14 slices vanilla cake (store-bought)
- ½ cup fresh pureed mango
- 1 mango, cut into small pieces
- 2 tablespoons chopped pistachio
Mango Cream
- 2 cups heavy whipping cream
- 1¾ cups mango pulp (Deep Kesar mango pulp recommended)
- ⅓ cup powdered sugar (store-bought)
Instructions
- Prepare Mango Cream: In a chilled mixing bowl, combine 2 cups heavy whipping cream and ⅓ cup powdered sugar. Whip until the mixture is slightly thickened and creamy, but do not whip to soft peaks.
- Incorporate Mango Pulp: Add 1¾ cups mango pulp to the whipped cream and whisk just until smooth and well combined, about a minute. Be careful not to overwhip; the mixture should have a rich, creamy consistency rather than a fluffy whipped cream texture.
- Adjust Sweetness: Taste the mango cream and add more powdered sugar if needed to achieve mild sweetness according to your preference.
- Assemble Cake – First Layer: Place half of the vanilla cake slices at the bottom of a serving dish. Spoon and spread a layer of fresh or store-bought mango puree evenly over the cake slices to enhance the mango flavor.
- Assemble Cake – Cream and Mango: Spread half of the prepared mango cream over the mango puree layer. Sprinkle some diced fresh mango pieces on top, if using.
- Repeat Layers: Repeat layering with the remaining cake slices, mango puree, mango cream, and diced mango pieces. Finish by sprinkling chopped pistachios and some extra mango pulp on top for garnish.
- Chill and Serve: Refrigerate the assembled cake for at least 6 hours to allow the flavors to meld and the cake to set. Serve chilled for the best taste and texture.
Notes
- Use a chilled mixing bowl and utensils for whipping cream to achieve better volume and texture.
- Do not overwhip the mango cream to avoid it turning too stiff.
- Fresh mango puree enhances flavor but store-bought mango puree works well in a pinch.
