This Easy Homemade Passion Fruit Curd is a tangy and sweet spread made from fresh passion fruit puree, egg yolks, sugar, and butter. Perfect for adding a tropical twist to your desserts, pastries, or breakfasts, this smooth and silky curd is simple to prepare using either direct or indirect heat methods and requires only 30 minutes to make.

  • Total Time: 30 minutes
  • Yield: 2 servings

Ingredients

Passion Fruit Puree

  • 1 cup passion fruit puree (about 8-10 passion fruits)

Main Ingredients

  • 4 large egg yolks
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter (cut into small cubes)
  • 1/8 teaspoon salt

Instructions

  1. Preparing the Passion Fruit: Cut the passion fruits in half and scoop out the pulp. Strain the pulp through a fine-mesh sieve to extract the puree, reserving some seeds for garnish if desired. You should have about 1 cup of puree ready.
  2. Mixing the Ingredients: In a mixing bowl, combine the egg yolks, granulated sugar, and passion fruit puree. Whisk until the mixture is well incorporated and smooth.
  3. Cooking the Curd (Direct Heat Method): Place the mixture in a saucepan over medium heat and cook, stirring constantly, until it thickens to a custard-like consistency. This requires careful attention to prevent curdling or burning.
  4. Cooking the Curd (Indirect Heat Method): Alternatively, set the mixture in a heatproof bowl over a pot of simmering water (double boiler). Stir constantly until the mixture thickens evenly and gently, reducing the risk of overcooking.
  5. Finishing the Curd: Once thickened, remove the curd from heat. For a silky smooth texture, strain it through a fine-mesh sieve — this step is optional but recommended. Then, add the butter cubes and salt, stirring until the butter has completely melted and is fully incorporated into the curd.
  6. Chilling: Transfer the passion fruit curd to an airtight container. Press plastic wrap directly onto the surface to prevent a skin from forming. Chill in the refrigerator for at least 2 hours before serving or using in recipes.

Notes

  • Use ripe passion fruits for the best flavor and highest juice yield.
  • If you prefer a no-seed texture, reserve the seeds for garnish or discard after straining.
  • Stir constantly while cooking to avoid curdling or scorching the curd.
  • Straining the curd will give it a smoother texture, but this step can be skipped if you prefer a more rustic curd with seeds.
  • Store the curd in the refrigerator and consume within one week for optimal freshness.
