This Easy Ground Venison Shepherd’s Pie is a hearty and comforting dish perfect for family dinners. Ground venison is cooked with aromatic onions, garlic, and a blend of seasonings, simmered in a rich beef stock to create a silky gravy with peas and carrots. Topped with creamy parmesan mashed potatoes and baked to golden perfection, it’s a nutritious and flavorful twist on a classic shepherd’s pie.

  • Total Time: 50 minutes
  • Yield: 12 servings

Ingredients

Meat and Vegetables

  • 1 ½ cups diced white onion
  • 1 TBSP minced garlic
  • 2 pounds ground venison (thawed)
  • 1 pound frozen pea and carrot blend

Seasonings & Thickeners

  • 1 TBSP Kosher salt
  • 1 tsp freshly ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 TBSP cornstarch

Liquids & Fats

  • 1 TBSP olive oil
  • 1 TBSP salted butter
  • 2 cups beef stock

Topping

  • 4 cups prepared mashed potatoes
  • 1 cup freshly shredded parmesan cheese (or ½ cup canister shaky cheese)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to get ready for baking after assembling the dish.
  2. Sauté Onions and Garlic: In a heavy-bottomed shallow Dutch oven or large skillet over medium heat, heat the olive oil and butter. Add diced onions with a pinch of Kosher salt and stir to coat. Cook until onions begin to soften, about 3 minutes, then add garlic and cook until fragrant, about 1 more minute.
  3. Cook Venison and Season: Add the ground venison to the pan and season with the remaining Kosher salt, black pepper, garlic powder, and onion powder. Cook until the meat is browned and cooked through. Stir in the cornstarch to help thicken the filling.
  4. Add Beef Stock: Pour in the beef stock gradually, stirring constantly to avoid lumps, then bring the mixture to a boil.
  5. Simmer Filling: Cook the filling, stirring occasionally, until the beef stock has reduced into a smooth, silky gravy, about 10 minutes. Stir in the frozen peas and carrots; they will cook further during baking.
  6. Prepare Topping: While the filling simmers, mix the shredded parmesan cheese into the prepared mashed potatoes thoroughly.
  7. Assemble Pie: Spread the cheesy mashed potatoes evenly over the venison filling in the Dutch oven or skillet.
  8. Bake: Bake the assembled shepherd’s pie in the preheated oven for 10 minutes.
  9. Broil to Finish: Switch oven to broil and broil the pie on low for 6 minutes, or on high for 3 minutes if desired, to create a golden, slightly crispy topping.
  10. Cool and Serve: Remove from oven and let the shepherd’s pie cool for a few minutes before serving to allow flavors to meld and the topping to set.

Notes

  • You can use freshly made mashed potatoes or high-quality store-bought mashed potatoes to save time.
  • If you prefer a milder cheese flavor, reduce parmesan cheese or substitute with mild mozzarella.
  • Adjust seasoning to taste, especially salt, depending on the saltiness of beef stock used.
  • Broiling time can be shortened or extended based on your desired topping crispness.
  • Ground venison can be substituted with ground beef if preferred, though flavor will differ.
