Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners and set it aside while you prepare the batter.
  2. Combine dry ingredients: In a medium mixing bowl, whisk together the gluten free baking flour blend, baking powder, pumpkin pie spice, baking soda, salt, and cinnamon until evenly combined. Set this mixture aside.
  3. Combine wet ingredients: In a large mixing bowl, whisk the pumpkin puree, granulated sugar, eggs, vegetable or canola oil, unsweetened applesauce, and vanilla extract until the mixture is smooth and uniform.
  4. Mix wet and dry ingredients: Gradually add the dry ingredient mixture to the wet ingredients, whisking until just combined and smooth, making sure not to overmix.
  5. Fill muffin cups: Using a 1/4 cup measure, scoop the batter into the prepared muffin tin cups, filling each about three-quarters full. If desired, sprinkle about 1/2 teaspoon of turbinado sugar on top of each muffin for a lightly crunchy topping.
