This Easy German Potato Salad features tender boiled potatoes tossed in a tangy apple cider vinegar dressing with finely diced onions and a hint of chives for garnish. It’s a classic warm salad that’s simple to prepare and perfect for gatherings or as a side dish.

  • Total Time: 55 minutes
  • Yield: 6 servings

Ingredients

Potatoes

  • 2 pounds white (new) or Yukon gold potatoes

Salad Dressing and Seasoning

  • 1/2 cup white onion, finely diced (green onions can be used as an alternative)
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons apple cider vinegar
  • 1/4 cup vegetable oil
  • 1 tablespoon minced chives (optional, for garnish)

Instructions

  1. Boil the Potatoes: Place the whole unpeeled potatoes in salted boiling water and cook for about 25 minutes, or until they are easily pierced with a fork but not mushy. Larger potatoes might require additional cooking time. Drain the potatoes and lay them out in a single layer to cool slightly.
  2. Peel the Potatoes: Once the potatoes are cool enough to handle yet still warm, gently remove the skins using a thin knife or potato peeler. Alternatively, you can refrigerate the potatoes whole overnight and peel them the next day.
  3. Slice the Potatoes: Slice the peeled potatoes into thin discs and transfer them into a medium-sized bowl.
  4. Season with Salt, Pepper, and Onions: Sprinkle the salt and pepper over the potato slices and stir gently to coat them evenly. Then add the finely diced onions and mix carefully.
  5. Add Vinegar and Oil: Pour the apple cider vinegar over the potatoes first, stirring gently to help the warm potatoes absorb the tangy flavor. Then add the vegetable oil and stir again. Taste the salad and adjust seasoning if needed.
  6. Garnish and Serve: Sprinkle minced chives over the top if desired for added flavor and visual appeal. Serve the potato salad at room temperature or lightly chilled for best taste.

Notes

  • Use white or Yukon gold potatoes for the best texture and flavor.
  • Adding vinegar before oil ensures the potatoes absorb the tangy flavor properly.
  • The salad can be served warm, at room temperature, or chilled according to preference.
  • Chives add a mild onion flavor and a pop of color but are optional.
  • If preparing in advance, potatoes can be refrigerated whole and peeled the next day.
