Ingredients
Steak Bites
- 2 good-quality beef steaks of your choice (such as sirloin or rump), chopped into bite-sized pieces
- Salt and freshly ground black pepper, to taste
- 2 tsp garlic powder
- 1 tbsp olive oil
- 3.5 oz butter (about scant 1 stick; salted or unsalted)
- 2 garlic cloves, grated or finely minced
- 0.5 oz Parmesan cheese, grated
- A handful of fresh parsley, chopped
Parmesan Mashed Potatoes (Optional)
- 1.1 lb potatoes, peeled and chopped
- Salt, generous amount for boiling potatoes
- 1.75 fl oz milk (approximately)
- 2 tbsp butter (salted or unsalted)
- 1 oz Parmesan cheese, grated
- Additional salt and freshly ground black pepper, to taste
Instructions
- Season chopped steak: Chop the steaks into bite-sized pieces. Pat dry with paper towels to remove excess moisture. Season generously on all sides with salt, freshly ground black pepper, and garlic powder to ensure the flavors penetrate the meat.
- Sear steak: Heat the olive oil in a large frying pan over high heat until very hot. Add the steak bites and fry for about 2 minutes on each side, or until well seared and browned. Remove the steak bites from the pan and set aside on a clean plate to rest while you prepare the garlic butter.
- Make garlic butter: Lower the heat slightly and add the butter to the same pan. Once melted, stir in the grated garlic, Parmesan cheese, and chopped parsley. Cook gently for 1–2 minutes until the garlic is fragrant and the mixture is well combined.
- Toss steak in butter: Return the steak bites to the pan with the garlic butter sauce. Toss well to fully coat the steak pieces and allow them to warm through in the flavorful butter mixture.
- Serve: Serve the garlic butter steak bites immediately. They are best enjoyed alongside creamy mashed potatoes or your favorite side dish for a fulfilling meal.
- Peel potatoes: (For Parmesan mashed potatoes) Peel and chop the potatoes into even-sized chunks to ensure even cooking. Place them in a large saucepan and cover with cold water. Add a generous amount of salt to the water.
- Boil potatoes: Bring the water to a simmer and cook the potatoes for 8 to 12 minutes, depending on size. They should be tender enough to be easily pierced by a fork. Once tender, remove from heat and drain well.
- Mash potatoes: Add the butter to the drained potatoes and mash using a potato masher or ricer until smooth and creamy.
- Finish mashed potatoes: Stir in the milk and grated Parmesan cheese until well incorporated for extra creaminess and flavor.
- Season to taste: Taste the mashed potatoes and adjust seasoning with salt and freshly ground black pepper as needed. For creamier texture, add more milk; for richer flavor, add more butter.
Notes
- Ensure the steak pieces are patted dry before seasoning to achieve a good sear and prevent steaming.
- Use a high smoke point oil like olive oil for searing steak to get a nice crust.
- Freshly grated garlic and Parmesan elevate the garlic butter sauce with more authentic flavors.
- Resting the steak bites briefly after searing preserves their juiciness.
- For creamier mashed potatoes, warm the milk before adding it to maintain heat and smoothness.
- This recipe works well with different cuts of steak such as sirloin, rump, or ribeye.
- You can prepare the mashed potatoes ahead and reheat gently with a splash of milk or cream.
