Ingredients
Chicken
- 2 pounds boneless skinless chicken breast, split in half lengthwise
- 2 tablespoons olive oil, plus more as needed
- 1 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper, plus more to taste
Onion Sauce
- 3-4 large yellow onions, sliced 1/4 inch thick
- 4 cloves garlic, finely minced
- 1 tablespoon arrowroot starch
- 1 cup low-sodium chicken broth
- 1/2 tablespoon fresh thyme
- Additional salt and black pepper, to taste
Topping
- 8 oz Gruyere cheese, shredded
- Fresh thyme, for garnish
Instructions
- Preheat and Heat Oil: Heat a large oven-safe braising pan with a lid over medium-high heat. Once hot, add 2 tablespoons of olive oil to the pan.
- Season and Sear Chicken: Liberally season both sides of the chicken breasts with salt and pepper. Add the chicken to the hot skillet and cook for 4-5 minutes on each side until golden and cooked through. Remove the chicken from the pan and set aside.
- Caramelize Onions: Reduce the heat to medium-low. Add the sliced onions to the pan and stir to coat in the oil. Cover the pan with the lid and let the onions cook for 20-30 minutes, stirring every 5 minutes, until they become soft and golden brown.
- Add Garlic and Arrowroot: Once onions are caramelized, add the minced garlic and cook for 1 minute until fragrant. Sprinkle the arrowroot starch over the onions and stir well to combine.
- Make Sauce: Pour in the chicken broth, add fresh thyme, salt, and pepper. Stir until well combined. Increase the heat and bring the mixture to a simmer. Let it simmer uncovered for 3-5 minutes until the sauce slightly thickens. Remove from heat.
- Combine Chicken and Sauce: Return the cooked chicken breasts to the pan, spoon the onions and sauce generously over each piece.
- Add Cheese and Broil: Top each chicken breast with a generous amount of shredded Gruyere cheese. Place the pan under the broiler until the cheese melts and is bubbly, about 2-3 minutes. Watch carefully to prevent burning.
- Garnish and Serve: Remove from the broiler, garnish with fresh thyme sprigs, and serve immediately.
