Ingredients
Wet Ingredients
- 1 1/2 cups Bananas (mashed)
- 1/4 cup Butter (melted, unsalted)
- 1 tsp Vanilla extract
- 1 Egg
- 1/2 cup Greek yogurt
Dry Ingredients
- 1 cup Flour (All-Purpose, plain flour)
- 1/2 cup Cocoa powder
- 1 tsp Baking soda
- 1/2 tsp Kosher salt
Sugars and Add-ins
- 1/3 cup Brown sugar
- 1/3 cup Granulated sugar
- 1 cup Chocolate chips (plus more for topping)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 180°C (350°F) and line a loaf pan with parchment paper to prevent sticking and ensure easy removal.
- Mash Bananas: In a large mixing bowl, mash the ripe bananas thoroughly with a fork or potato masher until smooth, forming the base of your batter.
- Combine Wet Ingredients: Add the melted butter, egg, granulated sugar, brown sugar, vanilla extract, and Greek yogurt to the mashed bananas. Whisk vigorously until the mixture is smooth and well combined, ensuring even sweetness and moisture.
- Sift and Mix Dry Ingredients: Sift the all-purpose flour, Dutch cocoa powder, kosher salt, and baking soda directly into the wet mixture. Use a spatula to gently mix until the ingredients are almost combined, avoiding overmixing to keep the bread tender.
- Fold in Chocolate Chips and Pour Batter: Gently fold in the chocolate chips just until incorporated. Pour the batter into the prepared loaf pan, smooth the top with a spatula, and sprinkle extra chocolate chips over the surface for added texture and flavor.
- Bake: Bake at 180°C (350°F) for 50–60 minutes, or until a toothpick inserted into the center comes out clean, indicating the bread is cooked through.
- Cool and Slice: Allow the banana bread to cool in the pan for at least 30 minutes before slicing. This resting time helps the bread set, preventing it from crumbling when cut.
Notes
- Use ripe bananas for maximum sweetness and moisture.
- Do not overmix the batter after adding flour to avoid a tough bread texture.
- Greek yogurt adds extra moisture and slight tanginess; plain yogurt can be substituted.
- Store the banana bread in an airtight container at room temperature for up to 4 days or freeze for longer storage.
- To enhance chocolate flavor, use Dutch-processed cocoa powder as specified.
- Check the bread at 50 minutes to avoid overbaking; ovens may vary.
