Ingredients
Chickpea Patties
- 1 (15 oz) can chickpeas, drained and rinsed
- 3/4 cup breadcrumbs
- 1/2 white onion, very finely diced or grated
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons olive oil (for frying)
- 1 large egg
Lemon Garlic Aioli
- 1 cup Greek yogurt
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Make the Lemon Garlic Aioli: In a small bowl, combine the Greek yogurt, extra virgin olive oil, garlic powder, salt, and black pepper. Whisk thoroughly until smooth and well mixed. Cover and refrigerate to let the flavors meld while preparing the patties.
- Prepare Chickpea Mixture: Mash the drained chickpeas using a potato masher or pulse briefly in a food processor until broken down but still slightly chunky. Transfer to a large bowl and add the breadcrumbs, finely diced or grated white onion, cumin, turmeric, garlic powder, onion powder, and the egg. Mix everything well until thoroughly combined.
- Shape Patties and Chill: Form the mixture into patties approximately 2 to 3 inches wide. Place the patties on a plate or tray and chill them in the refrigerator for at least 20 minutes to help them firm up and hold their shape during cooking.
- Cook Patties: Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Once hot, place the chilled chickpea patties into the skillet. Cook for about 5 minutes on each side or until they are golden brown and crispy on the outside.
- Serve: Remove the patties from the skillet and place them on paper towels to drain any excess oil if desired. Serve warm with a dollop of the prepared lemon garlic aioli on top or on the side for dipping.
Notes
- For a vegan version, substitute the egg with a flax egg and use dairy-free yogurt for the aioli.
- Chilling the patties before cooking is crucial to prevent them from falling apart in the skillet.
- Use fresh lemon juice for the best flavor in the aioli.
- These patties can also be baked at 375°F (190°C) for 20-25 minutes as a lighter alternative to frying.
- Serve the patties as a main dish, in a pita wrap, or as a hearty snack with other dips and salads.
