Ingredients
Crust
- 1 1/2 cups graham cracker crumbs
- 1/4 cup confectioners’ sugar
- 3/4 stick butter, melted
- 1/8 teaspoon salt
Filling
- 2 cups (2 packages) cream cheese or Neufchatel cheese, at room temperature
- 2 large eggs, at room temperature
- 2/3 cup sugar
- 2 teaspoons vanilla extract
Topping
- 1/4 cup fig syrup
- 5 fresh figs, sliced in half
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) to prepare for baking the cheesecake.
- Prepare the crust: In a bowl, mix together the graham cracker crumbs, confectioners’ sugar, melted butter, and salt until well combined and crumbly.
- Form the crust: Press the crumb mixture firmly into the bottom and up the sides of a pie pan, ensuring the crust layer is thick enough to hold the filling securely.
- Make the filling: In another bowl, beat the room temperature cream cheese with sugar until smooth. Add the eggs one at a time, then stir in the vanilla extract until the mixture is creamy and well combined.
- Bake the cheesecake: Pour the cream cheese filling into the prepared crust. Bake in the preheated oven for 20 minutes. Then, carefully cover the crust edges with strips of aluminum foil to prevent over-browning and bake for an additional 10 minutes.
- Cool and chill: Remove the cheesecake from the oven and allow it to cool completely at room temperature. Once cooled, refrigerate the cheesecake for several hours or until fully chilled and set.
- Add topping and serve: Before serving, drizzle the chilled cheesecake with fig syrup and arrange the sliced fresh figs on top. Enjoy your delicious dessert!
Notes
- Ensure cream cheese and eggs are at room temperature for a smoother filling.
- Covering the crust edges with foil prevents them from burning during the final baking phase.
- Chilling the cheesecake thoroughly improves texture and flavor.
- If fresh figs are not available, dried figs can be soaked in warm water or fig syrup as a substitute.
- For a gluten-free option, use gluten-free graham cracker crumbs.
