- Cook the Sauce: Whisk gently and continuously for about 10 minutes, scraping down the sides of the saucepan often. The sauce will darken to a copper penny color and develop a glossy sheen.
- Check Consistency: The caramel is ready when it coats the back of a spoon and falls off in a slow, heavy ribbon. Remove the saucepan from heat and allow the sauce to cool slightly.
- Cool and Store: Pour the caramel sauce into a glass jar and refrigerate to thicken further. Once chilled, it will be perfect for drizzling or for dipping apples.
