Ingredients
Chicken
- 3 large boneless skinless chicken breasts – boiled and shredded
Dip Base
- 8 ounces cream cheese – cubed
- 1 cup ranch dressing – homemade or store-bought
- 1 cup hot sauce (e.g., Frank’s RedHot) plus more as needed
- 1 teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
Add-ins
- ½ cup green onion – chopped
- 1.5 cups mozzarella cheese – shredded (divided)
- 1.5 cups cheddar cheese – shredded (divided)
Instructions
- Boil Chicken: Boil the boneless skinless chicken breasts in water until fully cooked through, then shred the meat using two forks to create fine, tender shredded chicken.
- Prepare Dip Mixture: In a large mixing bowl, combine the cubed cream cheese, ranch dressing, hot sauce, freshly ground black pepper, and garlic powder; mix until smooth and well incorporated.
- Add Chicken and Cheese: Fold the shredded chicken, half of the shredded mozzarella cheese, half of the shredded cheddar cheese, and the chopped green onions into the dip mixture, ensuring everything is evenly distributed.
- Transfer to Baking Dish: Spoon the combined mixture evenly into a baking dish, smoothing the surface for even baking.
- Add Cheese Topping: Sprinkle the remaining mozzarella and cheddar cheeses evenly over the top of the dip.
- Bake: Preheat the oven to 350°F (175°C), then bake the dip for about 20 minutes or until it is bubbly and the cheese on top is melted and golden brown.
- Serve: Remove from the oven and serve hot alongside your favorite chips, fresh veggies, or a low-carb pea salad for dipping.
Notes
- Use cooked shredded chicken to save time; store-bought rotisserie chicken works well.
- Adjust the amount of hot sauce to control the spiciness of the dip.
- For a creamier texture, use full-fat cream cheese and ranch dressing.
- This dip can be made ahead of time and refrigerated, then baked just before serving.
- Serve with celery sticks, tortilla chips, crackers, or sliced vegetables.
