- 4 cups fresh or frozen blueberries

Instructions
- Combine Ingredients: In a medium saucepan, combine 4 cups of blueberries, 1 1/2 cups of granulated sugar, zest and juice of one lemon, and a pinch of salt. Stir the mixture together over medium-high heat.
- Bring to Boil: Stir frequently as you bring the mixture to a boil to prevent burning and ensure sugar dissolves evenly.
- Simmer and Thicken: Reduce the heat to low and let the mixture simmer. Stir occasionally, gently crushing some of the blueberries with a spoon. Continue simmering for 7 to 10 minutes until the jam thickens slightly and a digital thermometer reads 220°F, indicating it has reached the gel point.
- Cool the Jam: Remove the saucepan from heat and allow the jam to cool for 5 minutes. This helps it thicken further before transferring.
- Jar and Store: Transfer the warm jam into sterilized jars. Leave the jars unopened at room temperature to cool completely, which may take 24 to 48 hours for the jam to fully set. Once cool, seal the jars tightly and store them in the refrigerator. The jam can be eaten immediately if desired.
Notes
- Using fresh or frozen blueberries works equally well; no need to thaw if using frozen.
- Be sure to use a digital thermometer to check for the jam’s set temperature at 220°F for best consistency.
- If you want a smoother jam, mash the blueberries more thoroughly while simmering.
- The jam will thicken as it cools, so do not worry if it seems slightly runny when hot.
- Store the jam refrigerated for up to 3 weeks once opened.
