  • 1 (15 oz) can chickpeas, drained

Instructions

  1. Boil the Beets: Wash the beet and cut it into quarters. Place the beet pieces into a saucepan and cover with water. Bring to a boil, then reduce the heat and simmer for 30 to 45 minutes, or until the beet is fork tender.
  2. Roast the Beets (Alternative Method): Preheat oven to 400°F (200°C). Remove beet greens, place the whole beet in a small baking dish or oven-safe ramekin with ½ cup water, and cover tightly with foil. Roast for 45 minutes or until fork tender. Allow to cool, then peel and cube the beet. Reserve some finely chopped pieces for garnish.
  3. Blend the Hummus: In a food processor, combine the cooked beets, drained chickpeas, crushed garlic, tahini, lemon juice, olive oil, cumin, coriander, and salt. Blend until smooth and creamy. If the mixture is too thick, add cold water a few splashes at a time to loosen the consistency. Taste and adjust salt and lemon juice as needed.
  4. Serve: Transfer the beet hummus to a serving bowl. Garnish with a drizzle of olive oil, reserved chopped beets, crumbled feta cheese, and freshly minced herbs such as parsley or dill. Serve alongside freshly baked pita bread, pita chips, crackers, or sliced vegetables.
