Ingredients
Chicken
- 2 pounds boneless, skinless chicken thighs (about 8 thighs)
Spice & Seasoning Mix
- 2 Tbsp olive oil
- 1.5 tsp mild curry powder
- 1/2 tsp ground ginger
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven: Set your oven to 400°F (205°C) to prepare for baking the chicken thighs at the right temperature for even cooking and browning.
- Mix the ingredients: In a large mixing bowl, add the chicken thighs, olive oil, mild curry powder, ground ginger, garlic powder, onion powder, salt, and pepper. Toss thoroughly to ensure every piece is evenly coated with the oil and spices.
- Marinate (optional): For enhanced flavor, allow the coated chicken to marinate for at least 30 minutes or up to 24 hours in the refrigerator. If short on time, proceed immediately—the marinade will still impart good flavor while the chicken cooks.
- Prepare the baking tray: Line a large baking sheet with parchment paper for easy cleanup. Arrange the chicken thighs in a single layer with space between each piece to ensure even baking. Alternatively, a large baking or casserole dish can be used if preferred.
- Bake the chicken: Place the tray in the preheated oven and bake for 25 to 30 minutes, or until the chicken reaches your desired doneness and juices run clear. The chicken should be cooked through but remain juicy and tender.
- Rest before serving: Remove the chicken from the oven and let it sit for 5 minutes. This resting time allows the juices to redistribute within the meat, making it more flavorful and moist.
Notes
- Marinating the chicken is optional but recommended for deeper flavor development.
- Ensure chicken thighs are spaced apart on the baking sheet to promote even cooking and browning.
- The recipe can be easily doubled or halved depending on the number of servings needed.
- Use mild curry powder to keep the flavors balanced and accessible; adjust spice levels as preferred.
- Can be served with rice, vegetables, or a fresh salad for a complete meal.
