Chicken
- 1 tbsp olive oil
- 6 bone-in skin-on chicken thighs (patted dry)
- 1 tsp sea or kosher salt
- 1 tsp cracked black pepper
Apple Cider Mustard Sauce
- 2 sweet apples (Gala, Fuji, or Honeycrisp), thinly sliced
- 1 tbsp apple cider vinegar
- 2 tsp whole grain mustard
- 1 cup apple cider
- ½ cup chicken broth
- 1 sprig fresh thyme (plus more for garnish)
Instructions
- Preheat the Oven: Heat your oven to 375°F (190°C) to prepare for finishing the chicken.
- Sear the Chicken: Heat olive oil in an oven-proof skillet (preferably cast iron) over medium-high heat. Pat the chicken thighs dry and season evenly with salt and black pepper. Place chicken skin side down in the hot skillet and cook until the skin is browned and releases easily, about 8-10 minutes. Flip the chicken and cook skin side up for 1 minute. Remove the chicken from the skillet and set aside on a plate.
- Sauté the Apples: Add the thinly sliced apples to the rendered chicken fat in the skillet. Sauté, stirring occasionally, until the apples are slightly caramelized, about 2-3 minutes.
- Deglaze and Make Sauce: Pour in the apple cider vinegar to deglaze the skillet, scraping up browned bits from the bottom. Stir in whole grain mustard, apple cider, and chicken broth until well combined.
- Braise the Chicken: Nestle the chicken thighs back into the skillet among the apple slices. Place the skillet in the preheated oven and braise the chicken until cooked through, reaching an internal temperature of 165°F (74°C), about 20-25 minutes depending on chicken size.
- Serve: Remove the skillet from the oven. Plate the chicken, topping with apple slices, spooning the cider mustard sauce over, and garnishing with fresh thyme. Serve immediately for best flavor.
