Instructions

  1. Preheat the air fryer: Set your air fryer to 360°F (182°C) to warm up while you prepare the quesadilla layers.
  2. Assemble the quesadilla: Spread about 2 tablespoons of refried beans on one side of a tortilla. Sprinkle approximately 1/2 cup of shredded cheese over the beans. If using vegetables, add about 1/3 cup of finely chopped mixed vegetables on top of the cheese. Then cover with a second tortilla. Lightly brush or spray olive oil on both sides of the quesadilla for a crispy finish.
  3. Air fry the quesadilla: Place the assembled quesadilla in the air fryer basket with the bean side facing up to keep the top tortilla weighted. Cook for about 4 minutes at 360°F. Flip carefully using a spatula and air fry the other side for another 3 to 4 minutes, or until both sides are golden brown and crispy.
