Ingredients

Steak and Marinade

  • 500 g sirloin steak
  • 2 tablespoons Cajun spice mix
  • 1 lime, juice only
  • 60 ml olive oil

Vegetables

  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 red onion, thinly sliced

To Serve

  • 8-10 small flour tortillas or 5 large tortillas
  • 1 avocado, sliced
  • 150 g sour cream or Greek yogurt
  • 1 bunch coriander, chopped

Instructions

  1. Marinate the Steak: Remove the sirloin steak from its packaging and place it in a shallow dish. In a separate bowl, mix together the Cajun spice mix, lime juice, and olive oil. Pour this marinade over the steak, making sure both sides are well coated. Let the steak marinate for at least 15 minutes, or up to 24 hours in the fridge for enhanced flavor.
  2. Prepare the Vegetables: While the steak marinates, slice the red pepper, yellow pepper, and red onion into long, thin strips. Set these aside for cooking later.
  3. Cook the Steak: Heat a nonstick or cast iron skillet over high heat until very hot. Remove the steak from the marinade and sear it in the skillet for about 4 to 5 minutes per side, depending on your preferred doneness. Once cooked, remove the steak and set it aside to rest for a few minutes.
  4. Cook the Vegetables: In the same pan used for the steak, add the sliced onions and cook over medium-high heat until they are soft and start turning golden, about 5 minutes. Add the sliced peppers and continue cooking for another 10 minutes. Pour in any remaining marinade and bring it to a boil, then reduce the heat and let it simmer for around 3 minutes until the sauce thickens. Remove the pan from heat.

Spread about one tablespoon of sour cream or Greek yogurt on each tortilla.
