Ingredients

Protein and Seasonings

  • 250 g boneless skinless chicken breast, diced into bite-sized cubes
  • 165 g king prawns, defrosted

  • ½ tablespoon Cajun seasoning

Avocado Lime Cream

  • 1 avocado, flesh scooped out
  • 150 ml fat-free Greek yogurt
  • Juice of 1 lime
  • ½ bunch coriander (cilantro)
  • 100-200 ml water (optional, to adjust sauce consistency)
  • Sea salt and pepper, to taste

Cabbage Slaw and Tacos

  • 150 g white cabbage, shredded
  • 8 small corn or flour tortillas

Instructions

  1. Prepare the spice mix: In a medium bowl, combine the chilli and garlic seasoning, Cajun seasoning, and garlic powder to create a flavorful spice blend.
  2. Season the chicken and prawns: Pat the prawns dry with a paper towel to remove excess moisture. Toss the prawns and chicken cubes in the prepared spice mix until they are evenly coated with seasoning.
  3. Cook the chicken and prawns: Heat the vegetable oil in a cast iron or large frying pan over medium-high heat. When the oil is shimmering, add the chicken cubes and fry for about 5-6 minutes until they start to brown. Then add the prawns and cook for an additional 3-4 minutes, ensuring both chicken and prawns are fully cooked through.
  4. Prepare the avocado lime cream: In a food processor, blend together the avocado, coriander leaves, lime juice, and Greek yogurt until smooth. Season with sea salt and pepper to taste. If the sauce is too thick, gradually add water until it reaches a drizzling consistency suitable for tacos.
  5. Make the cabbage slaw: Thinly slice the cabbage into fine ribbons and place in a large bowl. Add some of the avocado lime cream to the cabbage and toss until well coated. Adjust the quantity of sauce according to your preference to balance creaminess and freshness.
  6. Assemble the tacos: Lay the tortillas flat on a plate. Add a layer of the cabbage slaw, then top with the cooked chicken and prawn mixture. Drizzle with additional avocado lime cream for a creamy finish. Serve immediately and enjoy!
