Instructions

  4. Sauté Onions and Garlic: Reduce heat to medium and add sliced onions to the Dutch oven. Sauté until they begin to brown, about 3 minutes, scraping the pot to deglaze the browned bits. Add minced garlic and cook for another 1 minute until fragrant.
  5. Deglaze and Combine Liquids: Pour in the red wine (or beef broth as substitute) and deglaze the pot’s bottom and sides quickly. Add 2 cups beef broth, Worcestershire sauce, tomato paste, fresh thyme, rosemary sprigs, and bay leaves. Stir to combine and bring to a low boil.
  6. Slow Roast the Beef: Return the seared chuck roast to the Dutch oven along with any juices. The liquid should cover about half the meat; add more beef broth if necessary. Cover with the lid and place in the oven. Bake for 1.5 hours at 300 degrees F.
  7. Add Vegetables and Continue Cooking: Remove the Dutch oven from the oven. Add baby carrots and potatoes around the roast. Adjust seasoning with salt and pepper as needed. Replace the lid and return to the oven to cook for an additional 2 hours or until the meat is fork tender and vegetables are cooked through. For extra tenderness, cook another 15 to 30 minutes.
