Ingredients
Main Ingredients
- 1 cup Carolina Arborio Rice
- 1 cinnamon stick
- 2 cloves
- 4 cups whole milk
- 1 (14 oz) can sweetened condensed milk
- 1 (14 oz) can evaporated milk
- 1/2 teaspoon kosher salt
- 1 tablespoon vanilla extract
- 1 cup dulce de leche (plus more for drizzling)
- Ground cinnamon (for topping)
Instructions
- Combine and Cook Rice: In a large Dutch oven, combine the Arborio rice, cinnamon stick, cloves, and whole milk. Cook over medium heat until the mixture starts to boil. Then reduce the heat to medium-low, cover, and simmer until the rice becomes tender, about 20 to 25 minutes.
- Add Milks and Salt: Stir in the sweetened condensed milk, evaporated milk, and kosher salt. Continue cooking over medium-low heat, stirring frequently for about 20 more minutes until the pudding thickens. Stir constantly as it thickens to prevent sticking or burning.
- Flavor the Pudding: Once thickened, remove the pot from heat and mix in the vanilla extract. Allow the pudding to cool slightly to thicken further.
- Assemble Dessert Layers: Spoon some dulce de leche into the bottom of dessert glasses or bowls. Layer with several spoonfuls of the rice pudding. Repeat layering, finishing with a generous layer of rice pudding on top.
- Garnish: Sprinkle the top with ground cinnamon. If desired, drizzle additional dulce de leche over the final layer for extra richness.
- Serve: Serve the dulce de leche rice pudding warm, at room temperature, or chilled according to your preference.
Notes
- Use Arborio rice for creaminess and proper texture in the pudding.
- Stir frequently once condensed and evaporated milks are added to prevent scorching.
- Dulce de leche can be store-bought or homemade for best flavor.
- Rice pudding can be made a day ahead and refrigerated; warm before serving or enjoy chilled.
- For a richer pudding, whole milk is recommended over lower-fat versions.
- Adjust sweetness by adding more or less dulce de leche or condensed milk according to taste.
