Ingredients

Ice Cream Base

  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 (13.4 ounce can) dulce de leche
  • ¼ tsp vanilla extract

Instructions

  1. Heat the milk and cream: Pour the whole milk and heavy cream into a medium saucepan and bring it to a boil over medium heat. Once boiling, reduce the heat to a simmer and let it simmer gently for about 5 minutes to slightly thicken and infuse flavors.
  2. Incorporate dulce de leche: Remove the saucepan from heat and whisk in most of the dulce de leche, reserving a small amount to swirl in later. Whisk until the dulce de leche is fully dissolved and evenly incorporated into the milk and cream mixture.
  3. Add vanilla and chill the base: Whisk in the vanilla extract, then transfer the mixture to a metal bowl. To quickly cool, place this bowl into a larger bowl filled with ice water and chill for about 15 minutes until cold.
  4. Churn the ice cream: Pour the cooled mixture into the frozen bowl of an ice cream maker. Churn for approximately 15 to 20 minutes until the mixture thickens, becomes creamy, and reaches a soft-serve consistency.
  5. Freeze with dulce de leche swirl: Transfer the churned ice cream into a freezer-safe container. Spoon the reserved dulce de leche over the surface and gently swirl it in with a butter knife to create ripples of caramel flavor throughout. Cover the container with a lid or plastic wrap and freeze for at least 3 hours to firm up before serving.
