Ingredients
The Pistachio Insert
- 1½ sheets gelatin sheets (gold strength)
- 3 large egg yolks
- 2 tbsp granulated sugar
- 1 cup heavy cream
- ¼ cup sweetened pistachio spread (pistachio cream)
The Brownie Base
- 4 tbsp unsalted butter
- ¼ cup dark baking chocolate (70% cocoa)
- 1 large egg
- ¼ cup granulated sugar
- ½ tsp vanilla extract
- ¼ cup all-purpose flour
- 1 pinch salt
- ⅓ cup crushed pistachios
Kataifi Crunch Layer
- 1 tbsp unsalted butter
- 1½ cups kataifi pastry (Kadaïf), roughly chopped
- ½ cup sweetened pistachio spread (pistachio cream)
The Chocolate Mousse
- 3 sheets gelatin sheets (gold standard)
- 1 ¼ cups dark baking chocolate (70% cocoa), chopped
- 1 cup whole milk (full cream)
- ⅔ cup heavy cream (35% fat)
- 1 tsp vanilla extract
- 5 large egg yolks
- ½ cup granulated sugar
- 1 ⅓ cups cold whipping cream (for whipping)
- 4 sheets gelatin sheets (gold standard)
The Glaze
- 1 cup granulated sugar
- ¼ cup glucose syrup
- 7 tbsp water
- ¾ cup unsweetened cocoa powder
- ¾ cup heavy cream
- 1 tbsp heavy cream
- Gelatin soaked in cold water (from 4 sheets gelatin sheets)
Decoration
- 1 oz (30g) dark chocolate (for snowflake decorations)
- 1 tbsp green candy melts (for leaves)
- Gold shimmer spray
Instructions
- Soak Gelatin for Pistachio Insert: Place 1½ sheets of gelatin sheets in a bowl of cold water for 10 minutes until softened.
- Prepare Egg Yolks for Insert Custard: Whisk 3 egg yolks with 2 tbsp sugar until pale and smooth.
- Heat Heavy Cream: Warm 1 cup heavy cream in a saucepan over medium heat until steaming, then remove from heat.
- Temper Egg Mixture: Gradually pour hot cream into egg yolks while whisking constantly to prevent scrambling.
- Cook Custard: Return mixture to low-medium heat and cook gently, stirring constantly until thickened and reaching 180–183°F (82–84°C).
- Add Gelatin and Pistachio Spread: Drain and squeeze gelatin sheets, stir into hot custard until dissolved, then add ¼ cup pistachio spread and mix smooth.
- Freeze Pistachio Insert: Pour custard into an 8-inch ring mold lined with plastic wrap and freeze for at least 3 hours until solid.
- Preheat Oven and Prepare Pan: Set oven to 320°F (160°C). Grease and flour an 8-inch round cake pan, tapping out excess flour.
- Melt Butter and Chocolate: In a microwave-safe bowl, melt 4 tbsp unsalted butter and ¼ cup dark chocolate in short bursts until smooth.
- Whisk Eggs and Sugar: In another bowl, whisk 1 large egg with ¼ cup sugar until pale and light.
- Combine Chocolate and Egg Mixtures: Stir melted chocolate mixture into whisked eggs and sugar.
- Add Dry Ingredients: Stir in ½ tsp vanilla, ¼ cup flour, and a pinch of salt until just combined, then fold in ⅓ cup crushed pistachios.
- Bake Brownie Base: Pour batter into prepared pan and bake for 12 minutes; center should remain slightly soft. Cool completely in pan.
- Prepare Kataifi Crunch: Melt 1 tbsp butter in a pan over medium heat. Add 1½ cups roughly chopped kataifi pastry and sauté for 5–7 minutes, stirring constantly until golden and crispy. Cool on paper towels.
- Mix Crunch Layer: Combine cooled kataifi with ½ cup pistachio spread in a bowl until evenly mixed.
- Assemble Brownie Crunch Layer: Spread crunch mixture evenly over cooled brownie. Press lightly to adhere, then refrigerate to set.
- Soak Gelatin for Mousse: Soak 3 sheets gelatin in cold water for 10 minutes; have 1 ¼ cups chopped dark chocolate ready in a heat-proof bowl.
- Heat Milk and Cream: In a saucepan, heat 1 cup milk, ⅔ cup heavy cream, and 1 tsp vanilla extract until steaming.
- Temper Egg Yolks: Whisk 5 egg yolks and ½ cup sugar until combined. Slowly whisk in hot milk mixture to avoid curdling.
- Cook Mousse Custard: Return mixture to stove, cook over medium heat stirring until 180–183°F (82–84°C). Remove from heat and stir in drained gelatin.
- Melt Chocolate and Combine: Microwave chopped dark chocolate in intervals until melted. Pour hot custard over chocolate and mix until smooth.
- Cool Chocolate Mixture: Let the chocolate custard cool to 95–104°F (35–40°C) at room temperature.
- Whip Cream and Fold: Whip remaining 1 ⅓ cups heavy cream to soft peaks. Fold gently into cooled chocolate custard in three additions to keep airy.
- Prepare Ring Mold: Line a 10-inch ring mold with plastic wrap tightly stretched across bottom.
- Pour Mousse Layer 1: Pour two-thirds of mousse into mold. Tap gently to remove air bubbles and freeze for 10 minutes to firm.
- Add Pistachio Insert: Place frozen pistachio insert in center of mousse, pressing lightly.
- Pour Remaining Mousse: Pour the remaining mousse over the insert.
- Assemble Brownie Layer: Place brownie with crunch side down on top of mousse layer, pressing gently so mousse touches sides flush with brownie.
- Freeze Cake: Freeze the entire cake for at least 6 hours or preferably overnight until fully set.
- Soak Gelatin for Glaze: Soak 4 gelatin sheets in cold water until soft.
- Cook Glaze Sugar Mixture: In a saucepan, bring 1 cup sugar, ¼ cup glucose syrup, and 7 tbsp water to a boil. Cook until 217°F (103°C). Remove from heat and whisk in ¾ cup cocoa powder until smooth.
- Heat Cream and Add Gelatin: Warm ¾ cup heavy cream to 140°F (60°C), add drained gelatin sheets until dissolved, then mix this into cocoa syrup in three parts gently.
- Smooth Glaze: Use an immersion blender on low-medium speed, keeping blade submerged to prevent bubbles, until glaze is smooth.
- Strain and Cool Glaze: Strain glaze through metal colander into a jug. Cool to 86°F (30°C).
- Glaze the Cake: Remove cake from mold and place on wire rack over tray. Pour glaze over frozen cake in one smooth pour.
- Decorate Cake: Once glaze drips cease, transfer cake to platter. Thaw in refrigerator before serving.
- Make Chocolate Snowflakes: Melt 1 oz dark chocolate in microwave in 20-second intervals stirring between. Spread thinly on silicone mat to thickness of credit card. Let set to leather stage, cut snowflakes using cutter without removing cut shapes. Chill mat 10 minutes until firm. Peel shapes off mat.
- Gild Snowflakes: Place snowflakes on paper towel and spray with gold shimmer spray.
- Make Chocolate Leaves: Melt 1 tbsp green candy melts, spoon into leaf silicone mold, tap to remove air bubbles. Refrigerate 15 minutes to set, then unmold.
- Decorate Leaves: Lightly mist leaves with gold shimmer spray or brush with gold luster dust.
Notes
- Ensure all gelatin sheets are fully softened before incorporating into mixtures to avoid lumps.
- Temperature control is critical during custard cooking to prevent curdling; do not exceed 183°F (84°C).
- When folding whipped cream into chocolate custard, use a gentle motion to maintain airiness for a light mousse texture.
- Glaze should be poured over the cake while the cake is still completely frozen to achieve a smooth, glossy finish.
- Allow the cake to thaw in the refrigerator after glazing for best slicing results.
- Chocolate decorations can be prepared a day ahead and stored in a cool, dry place wrapped loosely.
- Kataifi pastry can burn easily; stir constantly and watch closely when toasting.
