Instructions
- Prepare dry ingredients: Whisk together the flour, cocoa powder, baking soda, cornstarch, and salt in a medium bowl. Set this mixture aside for later incorporation into the dough.
- Cream butter and sugars: In a large mixing bowl, beat the softened unsalted butter with the brown sugar and granulated sugar until the mixture is light and fluffy. This aerates the batter, ensuring a tender cookie texture.
- Add egg and vanilla: Incorporate the large egg and vanilla extract into the butter and sugar mixture. Mix until completely combined. Turn off the mixer and scrape down the bowl sides to ensure even mixing.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the butter mixture on low speed, mixing gently until just incorporated to avoid overworking the dough.
- Mix in chocolate chips: Turn off the mixer and stir in 1 cup of the chocolate chips by hand. Reserve the remaining 1/4 cup chocolate chips for topping the cookies later.
- Chill the dough: Cover the bowl tightly with plastic wrap and refrigerate the dough for at least 3 hours, up to 48 hours. This chilling step helps develop flavor and improves texture.
- Preheat oven and prepare baking sheets: When ready to bake, preheat your oven to 350°F (177°C). Line two cookie sheets with parchment paper or silicone baking mats to prevent sticking.
- Form dough balls: Remove the dough from the refrigerator and let it sit at room temperature for about 15 minutes if chilled overnight to soften slightly. Form the dough into balls roughly 1 to 1.5 tablespoons in size for standard cookies, placing them about 1½ inches apart. For larger cookies, use about 3 tablespoons of dough per ball and space about 2½ inches apart on the baking sheets.
- Bake the cookies: Bake standard-sized cookies for 8-11 minutes or larger cookies for 12-14 minutes. Bake until the tops are just set but still soft. Remove the trays from the oven and immediately press a few of the reserved chocolate chips on the tops of each warm cookie if desired.
- Cool: Allow the cookies to cool on the baking sheets for 10 minutes to firm up before transferring them to wire racks to cool completely. Enjoy!
