Ingredients
Wet Ingredients
- 3 very ripe bananas
- 1/3 cup unsalted butter, melted and cooled slightly
- 2 tablespoons cooking oil
- 1 large egg
- 2 teaspoons pure vanilla extract
- 3/4 cup light brown sugar, packed
Dry Ingredients
- 1 cup all-purpose flour (plain flour)
- 1/2 cup unsweetened cocoa powder (or Dutch processed for richer taste)
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Add-Ins
- 1 cup semi-sweet chocolate chips, divided
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (176°C). Grease a 9×5-inch loaf pan thoroughly with nonstick spray to prevent sticking, then set aside.
- Mash Bananas and Combine Wet Ingredients: In a large bowl, mash the ripe bananas until smooth. Add the melted butter and cooking oil, mixing until well combined. Whisk in the egg, vanilla extract, and light brown sugar until the mixture is smooth and homogenous.
- Whisk Dry Ingredients and Combine: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and unsweetened cocoa powder. Gradually stir the dry ingredients into the wet banana mixture until just combined. Avoid overmixing to keep the bread tender. Fold in half of the semi-sweet chocolate chips gently.
- Pour Batter and Add Topping: Pour the batter into the prepared loaf pan, spreading evenly. Sprinkle the remaining chocolate chips evenly over the top of the batter for a visually appealing and extra chocolatey crust.
- Bake: Place the loaf pan in the preheated oven and bake for 50 to 55 minutes. To test doneness, insert a toothpick into the center of the bread; it should come out mostly clean with a few crumbs attached but no wet batter.
- Cool: Remove the bread from the oven and let it cool in the pan for 10 to 15 minutes. Then carefully remove the bread from the pan and transfer it to a wire rack to cool completely before slicing and serving.
Notes
- For richer chocolate flavor, use Dutch processed cocoa powder.
- Ensure bananas are very ripe for the best natural sweetness and moisture.
- Do not overmix the batter to avoid a dense loaf.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- Chocolate chips can be substituted with chunks or chopped chocolate if preferred.
