Potatoes

  • 10 baby potatoes (egg size)

Filling

  • 3 eggs, hard boiled and chopped

  • 1/4 cup chopped dill pickles (55 g)

  • 1 drizzle olive oil
  • Salt and pepper, to taste

Instructions

  1. Air Fry the Potatoes: Place the baby potatoes in the air fryer basket and cook them until the skins start to wrinkle and a knife easily slides through the center, indicating they are tender but still hold their shape.
  2. Boil the Eggs: Place eggs in a pot, cover with water, and bring to a boil. Cook until fully set, then transfer the eggs to cold water to stop cooking and make peeling easier.
  3. Prepare the Eggs: Peel the chilled eggs and finely chop them into small, even pieces to ensure a smooth, cohesive filling.
  4. Check Potatoes: Verify that the air-fried potatoes feel soft when gently pressed but maintain structural integrity without falling apart.
  5. Scoop the Potatoes: Slice a small portion off the top of each potato, then carefully scoop out the inside flesh leaving a thin shell to avoid breakage.
  6. Mash Potato Flesh: Place the scooped potato flesh into a bowl and mash it until mostly smooth, allowing some texture to remain for a rustic feel.
  7. Combine Eggs: Add chopped eggs to the mashed potato and gently combine to keep some chunkiness in the mixture.
  8. Add Flavorings: Mix in mayonnaise, Dijon mustard, chopped pickles, celery, blue cheese, Tabasco, garlic powder, onion powder, salt, and pepper. Stir until the filling is creamy but retains some texture.
  9. Fold in Chives: Incorporate the chopped chives, then taste and adjust seasoning with salt, pepper, or mustard as desired.
