Gulab Jamun
- 12-14 medium gulab jamun
Custard
- 3 cups 2% milk
- ½ cup organic sugar (adjust to taste)
- 4 tablespoons vanilla custard powder
- ½ teaspoon crushed cardamom powder

Instructions
- Prepare the Custard Paste: In a bowl, combine 4 tablespoons of custard powder with ½ cup of milk and whisk until a smooth, lump-free paste forms.
- Heat the Milk: Pour the remaining 2.5 cups of milk into a saucepan and heat over medium heat. Stir frequently to avoid the milk sticking to the pan and scorching.
- Dissolve the Sugar: When the milk reaches a simmer, add ½ cup of sugar, stirring continuously until fully dissolved.
- Add Custard Paste: Slowly pour the custard paste into the simmering milk while whisking continuously to prevent lumps from forming.
- Thicken the Custard: Continue cooking the mixture over low to medium heat, stirring constantly for about 5-7 minutes, until the custard slightly thickens.
- Flavor the Custard: Remove the custard from heat and stir in ½ teaspoon crushed cardamom powder.
- Cool and Refrigerate: Transfer the custard to a bowl, cover with cling wrap placed directly on the surface to prevent skin formation, and refrigerate for at least one hour.
- Assemble the Dessert: Cut each gulab jamun into quarters. In serving cups or small jars, place a few gulab jamun pieces, add a few spoons of chilled custard, top with a half gulab jamun, and sprinkle with crushed pistachios. Alternatively, start with custard at the bottom, then add gulab jamun pieces and sprinkle pistachios on top.
- Serve or Store: Serve immediately or refrigerate the assembled cups until ready to serve.
Notes
- Organic sugar used here is slightly less sweet than standard granulated sugar; adjust the sugar quantity accordingly to taste.
- Gulab jamun can be made 3-4 days in advance and refrigerated.
- Custard can be prepared 1-2 days in advance and kept refrigerated.
- Assembled custard gulab jamun cups can be made up to one day in advance and stored in the refrigerator.
- If the custard becomes too thick after refrigeration, whisk in a small amount of milk to restore a smooth consistency.
