Instructions
- Make the Dressing: In a small bowl or jar, whisk together avocado oil, lite soy sauce, rice vinegar, sesame oil, maple syrup, freshly grated ginger, and grated garlic until fully combined to create a flavorful and balanced dressing.
- Assemble the Salad: In a large mixing bowl, combine sliced Persian cucumbers, sliced mini sweet peppers, shelled edamame, thinly sliced green onions, chopped cilantro, chopped mint, sesame seeds, and optional chili crunch seasoning to build the salad’s fresh and vibrant base.
- Toss Everything Together: Pour the prepared dressing over the salad ingredients and gently toss everything until the mixture is evenly coated, ensuring all flavors meld together perfectly.
- Garnish & Serve: Sprinkle extra sesame seeds or Everything Bagel Seasoning on top for additional texture and flavor. Serve immediately for a crisp bite, or chill the salad for 15 to 20 minutes beforehand to enhance the taste and allow the dressing to soak in.
