Ingredients
Dressing
- ½ medium ripe avocado
- ⅓ cup (75g) Greek yogurt
- ⅓ cup (75g) mayonnaise
- 1 medium lemon, juiced
- 2 Tbsp fresh basil, packed
- 2 Tbsp fresh tarragon, packed
- 2 Tbsp fresh mint, packed
- 2 Tbsp fresh cilantro, packed
- 1 Tbsp (15ml) pickled jalapeño juice
- 2-3 tsp water (as needed)
- ½ tsp kosher salt
- ¼ tsp freshly ground black pepper
Salad
- 8 oz (227g) snap peas, trimmed, very thinly sliced on the diagonal
- ¼ cup medium red cabbage, very thinly sliced
- 3 scallions, ends trimmed, very thinly sliced
- 8 oz halloumi cheese, grated
- 2 Tbsp sesame seeds, toasted or untoasted
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Make the dressing: Combine avocado, Greek yogurt, mayonnaise, lemon juice, fresh basil, tarragon, mint, cilantro, pickled jalapeño juice, water, kosher salt, and black pepper in a blender. Purée until the dressing is very smooth and thick but pourable. Adjust seasoning and consistency by adding a little more water if needed.
- Prepare the salad: In a large mixing bowl, toss together the thinly sliced snap peas, red cabbage, and scallions. Using a box grater with large holes, grate the halloumi cheese directly over the bowl to reduce mess.
- Combine salad and dressing: Add the grated halloumi and sesame seeds to the bowl with the vegetables. Pour your desired amount of dressing over the mixture and use tongs to thoroughly toss everything together until well coated.
- Season and serve: Season the salad generously with flaky sea salt and freshly ground black pepper according to your taste preferences. Serve immediately for the best crunch and freshness.
Notes
- For an even thinner dressing, add more water gradually and blend again.
- Toasting the sesame seeds enhances their flavor but is optional.
- The salad is best enjoyed fresh to maintain the crispness of the snap peas and cabbage.
- Grating halloumi directly over the bowl helps minimize cleanup.
- If halloumi is unavailable, a similar salty cheese like paneer or feta can be substituted, though texture and flavor will vary.
