This Crockpot Tuscan Chicken recipe features tender, flavorful chicken breasts cooked slowly in a creamy sauce with sun-dried tomatoes, garlic, Parmesan cheese, and spinach. Perfect for an easy, hands-off dinner, it pairs wonderfully with pasta, rice, or crusty bread to soak up the rich sauce.

  • Total Time: 3 hours 10 minutes
  • Yield: 6 servings

Ingredients

Chicken

  • 4 boneless skinless chicken breasts
  • ½ tsp onion powder
  • 2 tsp Homemade Italian Seasoning or store-bought
  • Kosher salt and cracked black pepper to taste

Sauce

  • 1 cup heavy cream
  • ½ cup Parmesan cheese (grated)
  • ½ cup chicken broth
  • 2 cloves garlic, minced
  • ½ cup sun-dried tomatoes, drained and chopped
  • 1 cup baby spinach, chopped

Instructions

  1. Season the chicken: Season both sides of the chicken breasts evenly with Italian seasoning, onion powder, kosher salt, and cracked black pepper to build a flavorful base.
  2. Prepare the crockpot: Spray the inside of the crockpot with nonstick cooking spray to prevent sticking. Arrange the seasoned chicken breasts in a single layer at the bottom of the crockpot.
  3. Make the sauce: In a medium bowl, whisk together the chicken broth, heavy cream, minced garlic, chopped sun-dried tomatoes, and grated Parmesan cheese until well combined.
  4. Cook the chicken: Pour the prepared sauce mixture over the chicken breasts in the crockpot. Cover and cook on high for 3 hours or on low for 5 hours until the chicken is fully cooked and tender.
  5. Add spinach: Once the chicken is cooked, stir in the chopped baby spinach into the crockpot. The residual heat will wilt the spinach gently without overcooking it.
  6. Adjust seasoning: Taste the sauce and chicken, then add additional salt and cracked black pepper if needed to enhance the flavor.
  7. Serve: Serve the Tuscan chicken hot with your choice of pasta, rice, or crusty bread on the side to enjoy the creamy sauce.

Notes

  • For a thicker sauce, remove the chicken after cooking and simmer the sauce on the stovetop until it reaches desired consistency.
  • Sun-dried tomatoes add a tangy sweetness; substitute with roasted red peppers if preferred.
  • Use homemade Italian seasoning for freshness or store-bought for convenience.
  • Leftovers keep well refrigerated for up to 3 days and can be reheated gently.
  • Pair with garlic bread or a crisp green salad for a complete meal.
