Ingredients
Potatoes
- 1½-2 lbs Yukon gold potatoes, unpeeled
- 6 Tbsp (90ml) extra virgin olive oil, divided
- 1 tsp Kosher salt
- ¼ tsp freshly ground black pepper, plus more for serving
Fresh Ingredients
- 1 English cucumber, thinly sliced (not too thin to avoid mushiness)
- 4 oz (115g) smoked salmon, roughly chopped
- 2-3 Tbsp chives, thinly sliced (or 2 sliced scallions)
- 2 Tbsp fresh dill, finely chopped
- 2 Tbsp (15g) capers
Dressing
- ½ cup (115g) Greek yogurt
- ½ cup (120g) sour cream
- 1 tsp fresh lemon zest (from ½ medium lemon)
- 2 Tbsp (30ml) fresh lemon juice
- 1 Tbsp (15ml) extra virgin olive oil
- ½ tsp sweet paprika
- 1-2 tsp Everything Bagel Seasoning blend (or to taste)
- Flaky sea salt
- Freshly ground black pepper
Instructions
- Parboil the potatoes: Preheat your oven to 425°F (220°C). Place the unpeeled Yukon gold potatoes in a large pot and cover with cold water. Bring to a boil over high heat, then cook until the potatoes are tender, about 10 minutes. Drain and allow them to cool for 5-10 minutes. Transfer the potatoes to a parchment-lined baking sheet, leaving a few inches between each.
- Smash the potatoes: Place another piece of parchment paper over the potatoes. Using a large cup or a flat-bottomed object, press down firmly on each potato to smash them so they become approximately ¼ to ½ inch thick. It’s okay if small pieces break off, but aim to keep the potatoes mostly intact. Remove the parchment paper, discard it, then drizzle the smashed potatoes with 2 tablespoons of olive oil, 1 teaspoon Kosher salt, and ¼ teaspoon black pepper.
- Roast the potatoes: Place the baking sheet in the preheated oven and roast for 20-30 minutes. Cooking time will vary depending on the size and thickness of the potatoes. Roast until the edges are golden and crispy while the centers remain tender and fluffy.
- Make the dressing: In a mixing bowl, whisk together the Greek yogurt, sour cream, lemon zest, lemon juice, 1 tablespoon of olive oil, and sweet paprika. If desired, thin the dressing by whisking in an additional teaspoon or two of olive oil or water to reach your preferred consistency. The dressing should remain thick enough to generously coat the potatoes.
- Combine all ingredients: In a large bowl, combine the roasted smashed potatoes, sliced cucumber, smoked salmon, chives, dill, capers, and everything bagel seasoning. Toss everything well to evenly coat the ingredients. Taste and adjust seasoning with flaky sea salt and freshly ground black pepper as needed. Serve warm, at room temperature, or chilled. For a crowd, garnish with extra fresh dill or chives.
