Ingredients

Potatoes

  • -2 lbs Yukon gold potatoes, unpeeled
  • 6 Tbsp (90ml) extra virgin olive oil, divided
  • 1 tsp Kosher salt
  • ¼ tsp freshly ground black pepper, plus more for serving

Salad and Garnishes

  • 1 English cucumber, thinly sliced (just not too thin)
  • 4 oz (115g) smoked salmon, roughly chopped
  • 2-3 Tbsp chives, thinly sliced (or 2 sliced scallions)
  • 2 Tbsp fresh dill, finely chopped
  • 2 Tbsp (15g) capers
  • 1-2 tsp Everything Bagel Seasoning blend (or to taste)
  • Flaky sea salt
  • Freshly ground black pepper

Dressing

  • ½ cup (115g) Greek yogurt
  • ½ cup (120g) sour cream
  • 1 tsp fresh lemon zest (from ½ medium lemon)
  • 2 Tbsp (30ml) fresh lemon juice
  • 1 Tbsp (15ml) extra virgin olive oil
  • ½ tsp sweet paprika

Instructions

  1. Parboil the potatoes: Preheat your oven to 425°F (220°C). Place the unpeeled Yukon gold potatoes in a large pot and cover them with cool water. Bring to a boil over high heat and cook until the potatoes are tender, about 10 minutes. Drain and let them cool for 5-10 minutes. Then transfer to a parchment-lined baking sheet, spacing them a few inches apart.
  2. Smash the potatoes: Lay a piece of parchment paper over the potatoes and use a large cup to firmly press down on each potato individually, smashing them until they are about ¼ to ½ inch thick. It’s alright if small pieces break off, but try to keep them mostly intact. Remove and discard the parchment paper, then drizzle the smashed potatoes with 2 tablespoons of olive oil, 1 teaspoon kosher salt, and ¼ teaspoon black pepper.
  3. Roast the potatoes: Place the baking sheet with the smashed potatoes into the preheated oven. Roast for 20-30 minutes, depending on their size and thickness, until the edges are beautifully crispy while the centers remain tender and fluffy.
  4. Make the dressing: In a mixing bowl, whisk together the Greek yogurt, sour cream, fresh lemon zest, fresh lemon juice, 1 tablespoon olive oil, and sweet paprika. For a thinner consistency to coat the potatoes better, you can whisk in an additional teaspoon or two of olive oil or water. The dressing should be thick enough to cling nicely to the potatoes.
  5. Combine all ingredients: In a large mixing bowl, gently toss the roasted smashed potatoes with the sliced cucumber, smoked salmon, sliced chives, chopped dill, capers, and everything bagel seasoning. Mix well to ensure everything is evenly coated. Taste and adjust the seasoning by adding flaky sea salt or freshly ground black pepper as desired. Serve warm, at room temperature, or chilled. For an extra touch, sprinkle additional fresh dill or chives on top if serving to guests.
