Ingredients

Salmon Marinade

  • 1 lb. raw salmon, skin removed, cut into 1” cubes
  • 2 teaspoons toasted sesame oil
  • 1/4 cup tamari sauce
  • 2 tablespoons honey
  • 1/2 tablespoon rice wine vinegar
  • 1 garlic clove, minced
  • 1 teaspoon fresh ginger, minced

Thickening Sauce

  • 1 tablespoon cornstarch
  • 1 tablespoon water

Garnishes

  • 1 teaspoon sesame seeds
  • 1/4 cup sliced green onions

Instructions

  1. Prepare Marinade: In a large bowl, whisk together toasted sesame oil, tamari sauce, rice wine vinegar, minced garlic, and fresh ginger until well combined.
  2. Marinate Salmon: Add the cubed salmon to the marinade bowl, tossing gently to coat all pieces evenly. Allow the salmon to marinate for 10 minutes to absorb the flavors.
  3. Preheat Air Fryer: Set your air fryer to 400°F (204°C) and let it preheat while the salmon marinates.
  4. Remove Salmon from Marinade: Carefully remove the salmon pieces from the marinade, reserving the leftover marinade for the sauce.
  5. Air Fry Salmon: Place the salmon cubes in a single layer in the air fryer basket. Cook for 8-10 minutes until crispy and cooked through. If necessary, cook in batches to avoid overcrowding. Once done, remove and let the salmon rest.
  6. Prepare Glaze Sauce: Pour the reserved marinade into a small saucepan. In a separate bowl, mix cornstarch and water to create a slurry. Slowly add the slurry to the saucepan while stirring continuously. Simmer the sauce until it thickens to a glaze consistency.
  7. Glaze and Garnish: Drizzle the thickened sauce over the air-fried salmon bites. Garnish with toasted sesame seeds and sliced green onions before serving.
